Jareesh is considered one of the most famous traditional dishes in Buraydah and continues to hold a special place on dining tables during many occasions to this day. In the past, it was regarded as a staple dish within the local community due to its reliance on agricultural products for which Buraydah is well known, particularly wheat and vegetables.
Jareesh is prepared using crushed wheat grains, which are slowly cooked over low heat with milk and a special blend of spices. Lamb or chicken may also be added according to preference. After reaching full tenderness, a process that takes nearly three hours, the mixture is mashed until it reaches a smooth, cohesive texture. It is then served and garnished with fried onions, black lemon, and oil. A special tomato-based sauce with spices and hot chili is typically served alongside it, and mixed vegetables may also be added if desired.
